Over the years, chef Michael Beary has traveled far and wide within the Oaxaca region of Mexico to bring the authentic flavors and ingredients of the area back to Colorado. Today, he works directly with the farmers and food artisans who supply him with everything from rare chile peppers to roasted grasshoppers—he’s even become the only American importer to regularly ship back large quantities of these marvelous materials.
